These coconut macaroons are moist, light, and chewy. Toasted coconut has a complex nutty flavour which is perfectly paired with dark chocolate coating.
These coconut cookies can be done in 30 minutes, only a few ingredients required.

Ingredients

  • 2 large egg whites

  • 1/3 cup caster sugar

  • 1 tsp vanilla

  • Pinch of salt

  • 2 1/2 cups desiccated coconut

  • 2 Tbs all-purpose flour

  • 50g dark chocolate, melted

Directions

  • Preheat the oven up to 170C.
  • Combine egg whites, salt, sugar and vanilla in a mixer bowl. Mix until soft peaks. Mix in the desiccated coconut and flour. Let the mix to rest for a few minutes. Form the cookies using an ice-cream spoon and place onto baking tray lined with a baking paper. Bake for about about 25-30 minutes, rotating the tray. Place cookies to baking rack to cool completely. Then dip each bottom of cookies into melted chocolate and transfer to lined with baking paper chopping board. Chill in a fridge until the chocolate is set. Enjoy!
