Superfood Porridge with Berry compote and Cream

Perfect porridge is a healthy way to start the day. This nutritious, filling breakfast will definitely keep you going until lunchtime.

For this recipe I gathered all my favorite superfoods: nutrient-packed chia seeds, rich in fiber old fashioned rolled oats, quinoa for protein boost and amino acids, and coconut sugar which is natural unrefined sweetener full of flavour.

But most importantly, it’s just incredibly delicious berry compote and coconut cream, which both are an perfect accompaniment!

Ingredients

Serves 4

  • 1 Cup old fashioned rolled oats
  • 1/2 Cup white quinoa, rinse thoroughly with cool water
  • 2 Tbs Chia seeds
  • 4-5 Cups Water
  • Pinch of salt

For berry compote:

  • 2 Cups frozen berries, I use 1 cup of blueberries and 1 cup of raspberries
  • a few drops of vanilla extract
  • 2 Tbs Demerara sugar

To serve: 

  • 2 Tbs Coconut sugar
  • 1/2 Cup coconut cream
  • 1/2 tsp Cinnamon powder

+ dried fejoa to garnish

Directions

Place the oats, quinoa, chia and water in a large pan over a low medium heat. Add a pinch of salt and stir well. Bring to a steady simmer for 15 minutes, stirring as often as you can to give you a smooth creamy porridge – if you like your porridge runny, simply add more water until you’ve got the consistency you like.

For berry compote. Place berries and sugar in a sauce pan over a medium heat. Close the lid and gently simmer until the berries are soft (around 5 minutes). Open the lid and reduce the amount of liquid on high heat until it turns slightly thick and syrupy. Add vanilla extract and stir gently (try to keep most of berries from breaking up). Serve warm or at room temperature.

To Serve: Divide the porridge between bowls, spoon cream and berry compote on top. Sprinkle with coconut sugar and cinnamon powder.
