Tomatoes-confit Avocado Toast.

I have a relaxed weekend with lots of sleep, a healthy smoothie, avo toast and a bit of yoga. Just because we need to pamper yourself sometimes! How do you pamper yourself this weekend?

Preheat the oven up to 150C. Place cherry tomatoes on the baking tray, drizzle with some olive oil, sprinkle with salt. Bake in the preheated oven about 1 hour. Cool tomatoes-confit until room temperature. Spread the mashed avocado on toasted rye bread (rye sourdough bread on my photo), sprinkle with some gourmet salt (Maldon salt or Fleur de sel). Arrange tomatoes on the toast, sprinkle with some freshly-ground black pepper, drizzle with a good quality balsamic. Enjoy!
