Lemon posset is a dessert made from cream curdled by lemon juice, it has a texture which is a cross between a lush custard and silky lemon curd. A posset is a medieval drink that has made a comeback in recent times as a set dessert. With just three ingredients – lemon, sugar and cream – a posset is the easiest and most delicious make-ahead dessert!
The lemon posset will make the best Christmas trifle as well. Once you have made it you will never go back to buying custard.

Ingredients

  • 2 cups cream (single cream or double cream)

  • 2/3 cup sugar

  • 1/3 cup lemon juice

  • zest of one lemon

  • 1 teaspoon vanilla extract

  • pinch of fine salt

  • strawberry to serve

Directions

  • Combine sugar, lemon zest and cream in a saucepan and bring to the boil. Gently heat, stirring, until the sugar has melted. Bring to a simmer and bubble for 3-4 min. Turn off the heat and stir in the lemon juice. Cool to room temperature, then divide between 4 x 200ml ramekins or serving glasses, carefully cover and chill for at least 6 hours, or overnight.
  • Serve chilled with fresh strawberries and crushed biscuits.
