1 poached chicken breast, shredded
1 rose apple, chopped, drizzled with lemon juice
3 celery sticks and few leaves, chopped
1/2 cup dried cranberry
wraps
1 cup cooked red rice (optional)
- For dressing:
1/2 cup mayo (I prefer homemade or vegan mayo, which usually made with no additives)
1-2 Tbs maple syrup
1-2 Tbs apple cider vinegar
salt, pepper
Directions
- Mix all ingredients for dressing in a small bowl.
- In a large mixing bowl, toss together all remaining ingredients (except wraps), add dressing, season with salt and pepper. Divide the salad between wraps. Roll it up and enjoy!
