It’s never easy being a mum, trying to juggle a freelance job with family life so thanks HelloFresh for making life a little easier! My 2018 year was extremely busy with work, so many interesting things were explored, many projects were completed, but some ideas are still waiting for progress, but I just didn’t have the time.

As a working mum with a 9 year old girl (and 34 year old boy, haha) at home, I have to say a meal kit delivery service such as HelloFresh is a lifesaver! I’m always on the lookout for a healthy, easy meal. I’m also a conscious eater who prefers freshly cooked meals, so frozen meals rarely see a spot on our dinner table. Summer is a perfect time to enjoy fresh veggies from local farmers, so the Veggie box was our choice.

It was the first weekly meal kit delivery that arrived at my doorstep, so I wasn’t sure what to expect. Everything arrived in a large box, packed with ice packs and a chiller bag to keep the food fresh and safe until I picked it up and popped it in the fridge.

Each meal comes with a recipe card with photos that show all the ingredients you will need along with simple step by step instructions (the pre-packaged meals and colour coded stickers to recipe cards are a hit!).

All recipes are easy to follow thanks to colour coded recipe cards and they contain useful tips, such the best way to cut corn

I’m really impressed by the quality of the vegetables. Seems like all veggies have arrived straight from the farm. I got the sweetest and juiciest corn I have ever tried, the bags of snow peas were super fresh and the spring onion looked like it was picked from the garden.

To be honest, I was a little worried about the portion size and their nutritional value before the box has arrived. Sometimes, I buy vegetarian food in cafes but stay hungry, because the meal hasn’t been balanced properly. HelloFresh portion sizes were good and left me with enough leftovers for lunch the following day. All dishes were also packed with enough protein (nuts, cheese, eggs), carbs (pasta, rice, kumara) and dietary fibre (vegetables). All recipes are triple tested, they have been approved by the HelloFresh recipe team, certified by a nutritionist and most importantly by home cooks like me!

Meal #1: Indonesian-style fried rice with sesame fried egg (My daughter’s fave: Hello Bali, ha).

A fragrant and tasty Indonesian fried rice served with a fried egg for the oozy yolk. Juicy capsicum and sweet snow peas make this dish absolutely delicious.

Meal #2: Summer pesto risoni salad with sweet corn and goat cheese (mum’s fave).

Rice-shaped pasta, baby spinach, sweet corn, crunchy snow peas, aromatic pesto, and goat cheese. Finished with toasted almonds. I’m really impressed by how beautifully all these ingredients play together. I will make a note about it for my future recipes!

Meal #3: American BBQ halloumi with corn slaw and kumara wedges (dad’s fave).

Pan-fried halloumi cheese, crispy on the outside and oozy on the inside, served with perfectly paired cole-slaw and sweet kumara wedges. Pan-fried cheese and coleslaw are a match made in heaven!
